Executive Chef

Chef James Richards, a proud Iowa native, discovered his culinary passion early and honed it at the Iowa Culinary Institute. His journey then led him to Las Vegas, where he spent nearly a decade sharpening his skills under the legendary Chef Emeril Lagasse. After mastering the fast-paced world of the Vegas Strip, Chef James returned to his roots, bringing with him a refined vision of fine dining tailored for his home state.
Today, he serves as Executive Chef at the historic Hotel Fort Des Moines, where he leads the hotel's entire culinary program. At the heart of his work is Proudfoot & Bird, the hotel’s premier fine dining restaurant.
